Raspberry & White Chocolate Blondies

These buttery and delicious White Chocolate and Raspberry Blondies are the perfect special treat or the decadent dessert that will surely impress your friends and family! Quick and super easy to make too!


170 grams olive oil spread ( but you can use unsalted butter if you want to go full-on decadent)

225 grams brown sugar (which gives it that golden colour!)

2 teaspoons vanilla extract

1 large egg

210 grams plain flour

150 grams white chocolate

50 grams frozen raspberries (or fresh ones if in season!)


Preheat the oven to 180 C (360 F).

Grease and line an 8 inch square baking tin with baking or parchment paper, ensuring two sides overhang.

In a large mixing bowl, add the melted butter and sugar and gently whisk together. Add the vanilla extract and stir.

Add the egg and mix until combined.

Break the white chocolate into small chunks and stir in with flour.

Fold in the frozen raspberries and stir everything until amalgamated.

Once ready, pour the batter in prepared tin, smooth the top and place in the oven.Bake blondies for approximately 25 minutes or until golden on the edges and a skewer inserted in the middle comes out clean.

Leave in pan to cool completely and then cut into squares to serve.


I know what you are thinking, what is a blondie exactly?

Blondies can be considered part of the brownies family, similar high fat to flour ratio, similar 'melting in the mouth' texture.

Differently from the brownies tho, it's not the chocolate that gives it that luscious taste but the combination between the spread, the brown sugar and the vanilla that gives it that creamy caramel like base.

The combination between the sweetness of the white chocolate and the sour note of the raspberries round up the flavour of this blondies.

And trust me when I say these White Chocolate and Raspberries blondies hold it against any chocolate brownies you have tried until now (and trust me, I ADORE dark chocolate).
